There is nothing more exuberant on a Sunday morning than mimosas and omelets, unfortunately I had one too many mimosas and forgot to take a picture of my first ever omelet. O’well, I promise I will remember next weekend.
We are in the process of moving to a new house, therefor my eating habits this past week have been horrendous, to say the least. I have eaten at CiCi’s Pizza, Burger King, Pizza Patron and Po’s Mandarin House all in one week and for that I am embarrassed.
For some shred of redemption I decided to cook for my boyfriend on Saturday night and it turned out fabulous. The details are below.

What I had: Acorn Squash with Brown Sugar
Creamy Garlic Penne Pasta
French Baguette w/ Avocado Slices
I have no complaints, everything was precisely how it should have been. Click on the dishes above for the recipes - the squash recipe is from “America’s Test Kitchen” and the pasta is from Food.com - just a side note, I added two extra cloves of garlic and crushed red pepper for a bit more flavor.
Just imagine Monday’s fried shrimp po’ boy in the toaster oven and you will discover what I had last night for dinner. In case you are wondering, with a little magic from the toaster oven this po’ boy was just as good the second time around.
With the boyfriend’s dad in town for the week it was the perfect opportunity to try some new trailer cuisine. I like to stick to the old faithfuls like Torchy’s, The Odd Duck and well, Torchy’s but on Sunday we drifted over to Surf N Turf Po’ Boys on South Congress and I’m sure glad we did. The food was beyond amazingballs and the owner came out TWICE to make sure we were enjoying it! I’m adding this to the list of old faithfuls!

What I had: Fried Shrimp Po’ Boy & French Fries
If I had anything to complain about it’s the price. Three of us ate for $30, which is a bit steep. However, the fish and veggies are all organic and locally farmed so they have every right to mark up the price.
Boyfriend called me on the way home and asked if I wanted Torchy’s. Well that’s a stupid question.
